Cumin Parsnips

Ingredients

  • 1.25kg/2¾ lbs parsnips, peeled and cut into halves lengthways
  • 1½ teaspoon ground cumin
  • 3 tablespoons olive oil
  • 4 teaspoons of fresh thyme leaves

1. Preheat your oven at 200C/400F/Gas 6.

2. Put the olive oil on the parsnips. Place in a baking tray. Sprinkle with thyme, roast for 45 minutes until golden.
